I have long since come to a similar understanding in my metalwork. With every new design I start with a vision - but usually the pieces evolve along the way to something not quite like, or very different from the vision. But I've learned to appreciate the results as gifts.
Yes! Shimura herself shared a beautiful story among her essays, of gathering dyestuffs with school children, expecting a certain hue but ending up with something else. Rather than disappointment the surprise was reveived with excitement, and the teacher later wrote to say that to her it had been a lesson in exactly what you said above regarding her pupils.
